In these times of uncertainty, one thing is for sure-we are all cooking at home more than ever. Olga George is the embodiment of great home cooking. The longtime assignment editor at KDKA-TV is creating recipes from her home island of St. Croix, bringing a flair from ingredients that sing of the tropics.“Being a native of the islands has influenced my cooking greatly,” Olga says. “The spices, ingredients, combination and presentation is where I start because it is whoI am. Travels, curiosity and friends from different parts of the world have rounded out my cooking influence that continues to grow each day.”
Olga’s cooking style changes with the weather, and as the days have grown cooler, her focus has revolved to working on soups and stews. “Spice meats with a touch of sweetness like mango or pineapple,” are some of the things brewing in her home kitchen. Not one to stay stuck in one cooking style, Olga says she is hooked on the Great British Baking Show and has been trying out a mixture of pastries from that influence. Her favorite kitchen items? “A solid knife and cutting board while my Kitchen Aid mixer is never too far to help make tarts, Johnny cake, and bread!”
Here is one of Olga’s favorite recipes for you try at home:
Peel and core apples, squeezing a lemon on them before sprinkling with a mixture
of cinnamon, brown sugar and nutmeg.
For the dough:
2 cups of flour
1 Tbs baking powder
2 cups sugar
1 cup water
2 cups milk
3 sticks butter
2 pinches salt
cinnamon to taste.
Combine the flour, baking powder, and salt, then add butter to the
milk and water to make the dough. Kneed the dough, divide it into
sections to cover how many apples are peeled. Lightly flour a
surface to roll out enough dough to cover the apple. Spray a pan
with cooking oil, place the dumplings in the pan, lightly spraying
them before placing in a 350 degree over to bake for 30 minutes or
until the apple is softened and the dough is lightly browned.
